The New Haven Bagel Olmo Bagels, established in 2018, have given New Haven its own style of bagel to be proud of. Made from fresh grains, these treats have evolved into a product even New Yorkers choose over their own style of bagel. What makes them different? Grains and process. We use 82% high extraction or bolted grains milled by Ground Up in Holyoke, MA, along with fresh-milled malt from Thrall Family Farm in Windsor, CT, to give our bagel depth of flavor.
